Oveja Negra Cheese
Made by Torsten Krüger and his team, they use local sheep milk to recreate a Manchego-style cheese.
Their Oveja Negra cheese has a firm and compact consistency and a buttery texture, often containing small, unevenly distributed air pockets.
Aged for at least 12 months.
The colour of the cheese varies from white to ivory-yellow, and the rind from yellow to brownish-beige.
The cheese has a distinctive flavour, well but not too strong, creamy with a slight piquancy, and leaves an aftertaste that is characteristic of sheep's milk.
Delicious eaten on its own and with salumi or shaved onto salads, grated to make a Spanish frittata omelette.
Enjoy with a glass of sherry, Tempranillo red wine, apple cider or a lager.
