Gouda
Gouda (pronouced How-da) are a firm, Dutch-style cheese, coated in wax.
They can be natural in flavour or have herbs and spices in them.
Gouda is made from young, mild versions to several years old. The older they are, the sweeter caramel in flavour they become. The white tyrosine crystals also develop in the paste, a very positive attribute.
