Hard-ripened Crotonese is a sheep's milk cheese, made in the region of Calabria, Italy, aged in wicker baskets, giving it distinctive cross-hatch marks on the rind.
Softer, less flaky and less salty than other well-known grating cheeses, Crotonese has an earthy, nutty flavour with a slightly fruity finish.
It’s delicious on its own or accompanied by some fresh Italian bread.
