Piave Vecchio Oro DOP cheese
Piave Vecchio Selezione Oro (red label) is named after the Piave river.
The cheese comes from the northeastern part of Italy near the Dolomites in the Veneto region of Italy. It has been given the Protected Designation of Origin, otherwise known as the DOP which stands for Denomination di Origin Protetta.
A wonderful cheese that tastes like a young Parmigiano-Reggiano with a bit of aged Gouda. Nutty almonds with tropical fruit, this is another of what I would call a “value” cheese.
The Vecchio Selezione Oro, a matured variety of Piave, is offered only after it reaches its full potential at one year of ageing. It is hard, grainy and crumbly with a flavour that is mild and never sharp. With longer ageing, it develops a very intense, fruity flavour with an enduring taste.
The hard pate of the cheese is intense and straw-coloured, while the rind is smooth, even, intense ochre colour.
