In keeping with his Swiss heritage, Mr. Fritz Kaiser is a master of Raclette cheese making. As such, the cheese factory produces a wide variety of raclette cheese.

Griffon Raclette is a semi-soft cheese, surface ripened with the renown Québec beer, Griffon.

Along with the fruity and marked hazelnut aroma, the beer enhances a malty touch to the taste.

This is the classic cheese for the Swiss dish of "raclette".

The cheese's name originates from the French word ‘racler’ meaning ‘to scrape’, a reference to scraping the melted cheese from the wheel onto boiled potatoes.
