Blue cheese
Soft to semi-soft cheese with blue veinage throughout the paste (centre).
Cheese can have very slight blue veinage such as an introductory gateway, mild and creamy blue cheese to an extreme, salty and piquante blue cheese.
Penicilium roqueforti is the mould that is added into the milk. The cheese is pierced to permit air to reach the mould, to breathe and become blue.
